Farmhouse Worthy Covered Dish/ A Recipe (cookie)

 



A very good day seasonally, cooler temperatures prefail, an overcast sky.

Hello Homebody~

Won't you join me between the chores for a nice warm ginger snap cookie & a cuppa? 

Setting about doing some inside homemaking today, a little mopping, folding of clothes, baking some chewy ginger cookies, a nice surprise for my son who  is off today from work.

A list was made as it is every day of things to be done. The list evolves sometimes as the mood and physical requirements ebb and flow. Baking around my home is a priority, but not one which I planned for today. Every day some modification is done and re evaluating sometimes happens, today is one of those days. Cookies will be baked.

I've got all the ingredients measured out, just waiting for the butter to come to room temp.

I've made these 4 or 5 times in  recent months, they don't last long.

Today's Covered Dish, my contribution to our get together.

 Chewy Ginger Snap Cookies
 (They are nice &chewy, they don't snap)
Line a baking pan with parchment paper
Bake 350 degrees F
10 minutes
remove to cooling rack
 
In your mixing bowl:
Cream together 
1/2 cup of butter (room temp) =1 stick
1/4 cup of shortening
mix in
1 egg
1 cup brown sugar
1/2 cup molasses
add:
Spices ( put in small bowl and whisk together to blend
1 tsp cinnamon
1 tsp ginger
1 tsp nutmeg
1 tsp allspice  
add:
Dry Ingredients
 1 tsp salt
2 tsp of baking soda
2 1/2 cups flour
sanding sugar for rolling
 
Mix until well combined. Refrigerate 1-2 hours. Roll the dough into balls, and roll into sanding sugar. 
BAKE THEM UP & TEST TASTE!
