Weather roller coaster & homemade bread

Hello Out There!

Yesterday it hit 65-70, I went out with my coat in my hand just in case, by 3:00 the temperatures were falling, this morning it is 29 and we've had a wee bit very light dusting of snow. When I went out to put out the flag, it was very different than 24 hrs ago.

I've got some overnight sourdough bread percolating in the  cold oven, I've turned the on the light just to give it a little extra warmth, our kitchen is on the north side of the house. I like to give it about 24 hrs. It will be bubbly and ready for baking tomorrow morning.

I figure it's time to bake some bread, my husband, if a day doesn't go by he mentions this bread, so it is as good a time as any, can't go anywhere, it's cold. I'll make a soup to go with it for tomorrow.
 

 
There is no sugar in this recipe,  good ford digestion, and for those with sugar issues like myself. Because of the process of the overnight percolation it the yeast feed on the flour and it reduces the carbohydrate value...I read this somewhere but cannot remember where or I would post it exactly.

I would love to be able to bake some bread but at the moment I don't dare use the last of my bread flour. Bread is available at the supermarket but there is no flour, not even at the farm shop.
I'll be sure to check out the YouTube channel this evening. X

Homemade Sourdough bread sounds good. I am such a bread-loving person, that and sweets!!Good bread and a hearty bowl of soup? Can't be beat as a delicious supper.

I am thinking of making some sour dough starter. I have never done so before, but I have heard wonderful things about it.

Must check out that YouTube channel. Thanks for the recommendation.

Jackie, I've tried the starter, I just don't keep up with it like I'm supposed to. This bread makes 1 loaf, it has a crunchy crust and is chewy. I just make it overnight.
