Hello Happy Homebuddies!
Hope you are all well.
We are anticipating some weather event here in NE Ohio. I've got 1/2 a stewing hen thawing, and chicken soup will be soon on the stove. 20 degrees tomorrow, it will warm the house & those who work outside of it in the elements & ward off colds.
I remember when I was a young homemaker, back in the day you could find a nice assortment of different chicken pieces for depending on what you were going to do with it. Soup chicken was once found as a matter of fact, not so anymore.
We get our 1/2 hen, actually a whole one, the butcher cuts it 1/2. It is a soup chicken, and the broth it makes is like something your mom or grandmother would have made back in the day.
I'm looking forward to putting up the soup, and it will smell lovely in the house.

Here we can buy old hens for the soup pot. I detest the smell of simmering chicken so I make sure to use one or two star aniseeds. They mask the smell.
The soup I'm thinking of making soon is Broccoli/cheese.
I really need to look into purchasing a stewing chicken to make soup. Right now I seem to be more inclined to make bone broth from roasted chickens.
