Einkorn bread journey

 Hi Happy Homebuddies

I dare say a wee bit of sunshine would be welcome, but the snow is all gone for now which I am most thankful for. 

The decorations from Christmas are all down and tucked away until next year. I will miss the brightness the lights bring as we hunker down into the full swing of the season of winter.  In the fall I had made a few cuttings of a beautiful geranium we got in Amish country. It is rooting very nicely and hope for the spring and the anticipation of the beautiful scarlet flowers are evident.

For those of you who do Einkorn, and even those who may consider doing Einkorn flour/berries, I received a nice cookbook from my son for Christmas. 




Einkorn is an ancient grain. It is the grain from which all others come. It is pure and not a hybrid, just as GOD put it here. It is a good grain for those with gluten issues as it is low in gluten, high in protein, and vitamins. It is also a good choice for those who are watching their carbohydrate intake, of which I am in that catagory.

I have heard of Einkorn, but have never seen it here. Enjoy using it to make some of the recipes in that book.

I bake a lot with that flour, but have not ground my own grain for it yet. It may happen yet. I love peanut butter cookies with this flour (recipe is online). I have tried to make homemade English muffins with this flour, but it made them way too soft, and they deflated when taking them off the plan to heat in the pan. I have borrowed some of their recipe books from our library, but have not purchased any yet.
