I've got something new on the go in the fermentation journey. My intention was to make sauerkraut, which I already did in the crock. But in my perusing around I found a recipe for a different type of sauerkraut which comes in a variety of names.
The "official" name is called Curtido
The word curtido is short for the Spanish word “encurtido” which means pickled, and that is exactly how it is prepared. It is a typical Salvadoran slaw made from cabbage and other vegetables that are pickled in fruity vinegar.
I found this intriguing and have a batch going now on the countertop

The one recipe I found had something called Mexican Oregano. I have never heard of it. I was able to purchase a plant that I found online from a nursery. I figure I could at least harvest from the plant and dehydrate the leaves for the spice cupboard.
Mexican oregano has a recognizable citrus profile with hints of licorice, while regular oregano is an herb associated with Italian and Mediterranean ( Internet Source)
Is this a new herb to you?

I've never heard of Mexican oregano. I'd love to know what you think about how it differs from regular oregano. Our family doesn't really like oregano as it is too strong for us. Curtido sounds very good actually. I look forward to see how this turns out.
I have heard of Mexican oregano, but have not seen the plants in the nurseries nor in seed form. Looks all delicious.
I have never heard of that oregano. I wonder if I can find some here. The newest experiment in fermenting/pickling looks very colourful.

I haven't hear of Mexican oregano but it sounds interesting. The regular old kind that I grow in the back doesn't have much flavour. Not sure why not.
The plant is not shipped until May 5. According to what I have read it has more citrus notes and licorice. It differs from the basic Oregano.
I have ordered a plant, as I have not seen seeds or plants near me. Looking forward to trying it.
I ordered mine, it will come in the mail. I checked local nurseries etc, they don't carry it.
I have not grown oregano of any kind, I don't use it alot, this has different notes than regular oregano, belongs to the verbena family and has hints of lemon.
