I do, and if you like Kale I have a short and sweet recipe for you.
You can buy loose fresh Kale, or buy it by the bag, don't worry if you think 1 lb is alot of Kale, as it cooks down it's volume will reduce quite a bit.
I will saute up some Kale and onions, a pinch of salt and pepper in some Olive Oil.
Bring on the Pumpernickel Bread.
You can toast the bread or not it's your preference.
Spread the bread with cream cheese, add some Kale and a fried egg.
(insert a little hot sauce here)
This is a really good sandwhich.
Something quick and nutritious.Kale is a nutrition superstar due to the amounts of vitamins A, K, B6 and C, calcium, potassium, copper and manganese it contains. One cup of raw kale has just 33 calories and only 7 grams of carbohydrate. So, it's a very diabetes-friendly/weight-friendly vegetable.
Moving about smartly here at my homestead, always something to do.... what is new is that I make/take time for myself and do something which will bring me joy every day, even if it is just for a few moments each day.
Love making my little beeswax rosettes.
