Bread the Staff of life

 Good Afternoon!

The temperature has dropped, it's still mild, but cooler and cloudy better for baking.

So...this morning I started the croissant bread...

It begins as with most yeast breads, soon after the first rise it changes a wee bit.

It gets rolled out much like a cinnamon roll, the softened butter is placed on the dough and  it is folded in thirds, but not before the 2nd stick of butter is placed then folded. Resting in the fridge for 30 minutes, the process is repeated without the butter for the second and third rolling and folding.

I also used for the first time, my PAM replacement spray, a recipe from 

Cosmopolitan Cornbread

I like it, browned up the bread on the sides real nice...no stick.

I love bread! I sure hope I never have to avoid gluten. I can imagine how good your bread smells and tastes.
